The Bikini Cocktail

Serves 10 servings

For the Citrus Syrup (yields 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

To make the Cocktail (yields 850ml, to serve 10)

400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, to finish

Method

For the Cordial: Combine the listed items inside a pot, heat until it reaches a gentle boil, stirring until the sugar dissolves. After that, turn off the heat and leave to cool down fully. Decant to a clean bottle, close it keeping it chilled, it can be stored for up to one month.

To make Cocktail Base: Mix all the spirits and syrup into one large bottle, allow it to infuse for 60 minutes, then strain best through cheesecloth, making it fully clarified.

When ready to serve: Add 85ml from the cocktail base to a stirring glass filled with ice, and stir lightly for one minute to chill. Strain into a chilled martini glass or similar, garnish with a few cranberries and finish using a quick spritz with the mandarin essence over the drink.
